My Go-To Dinner Bowl
More often than not, I cook without a recipe. My idea of an easy lunch or dinner is to combine all the veggies I have on hand with a protein, some healthy fat, and fiber. My go-to dinner bowl takes less than 20 minutes to throw together, and less than 5 if your chicken is already cooked! Here's how I do it:
Veggies:
- always have EVOO, pink salt, pepper, and garlic powder on hand to season all of these things
- chop a sweet potato, rub it down in EVOO and the spices
- broil in the oven until spotty and crispy
- in a pan, sauté broccoli until it's almost done, then add kale, red onion, and a squeeze of lemon
- slice half of an avocado and set to the side
Chicken:
- I cook my chicken on medium heat in a covered cast iron skillet
- to season it, I use the spices listed above and add paprika and Trader Joe's 21 seasoning salute
- let it rest for a few minutes when it's done, then chop into bite-sized pieces
Combine all of the ingredients, sprinkle with hemp seeds, and you're done!
