Raw Pumpkin Pie Bites
I don't care if it's springtime and not even remotely pumpkin season - I make these raw pumpkin pie bites all year long and LOVE them! They are the perfect little morsel of healthy fats and protein from the nuts and seeds, and they take about 10 minutes to whip up:
Raw Pumpkin Pie Bites
- 1 cup canned pumpkin
- 1 cup coconut shreds
- 1/2 cup cashews
- 1/4 cup walnuts
- 1/4 cup sunflower seeds
- 2 tsp vanilla extract
- 1/4 cup coconut butter (melted)
- 1/4 cup raw maple syrup or honey
- 1 tablespoon pumpkin pie spice
Combine all ingredients in a food processor or high-powered blender and pulse until nuts and seeds are mostly ground. Then, roll the mixture into balls, place in an airtight container, and freeze. They are best when enjoyed a couple of minutes after you take them out of the freezer!
